Ingredients
½ package wide rice noodles
2 cups any green vegetable (broccoli)
3 tbsp cooking oil
2 cloves garlic crushed and fine chopped
½ cup water
2 tbsp oyster sauce
1 tbsp dark soy sauce
2 tbsp soy sauce
1 tbsp sugar
2 eggs
Instructions :
Place the dry rice noodles in a bowl, cover with hot water and let it soaks until white and soft drain well.
Chopped vegetable into bite size pieces and set aside.
In the large pan or wok over high heat add 2 tbsp of cooking oil and garlic stir for 5 second add noodles stir well then add water and let it cook to soften the noodle make sure all the water has evaporated and add dark soy sauce, stir instantly, add vegetable and stir until collapsed slightly. Push the noodles to the sides of the wok, then add the remain cooking oil and crack the eggs into the centre, keep stirring the eggs for 30 secs or until it begins to resembles a broken-up omelette.
To finish add oyster sauce, soy sauce, sugar and toss together, spoon out onto plates.
