Blueberry cake (melt in the mouth)


This recipe inspired by my old friend in the UK.

Ingredients

120g butter

100g sugar

1 tsp salt

1 tsp vanilla extract

2 egg yolks

200g flour (plain)

1 tsp baking powder

80ml milk

2 egg whites

4 tbsp sugar

200g blueberries coated with a little bit of plain flour

Preheat oven 180c. use 20cm baking tin or anything similar grease with butter

1. Sift flour and baking powder together and set aside.

2. cream but and sugar until fluffy add vanilla and salt, add egg yolks one at a time and continue beating until the entire ingredient mixed and creamy then add 80ml milk beat until all combine and set aside.

3. In a separate bowl beat egg whites until soft peaks form and add 4 tbsp sugar one tablespoon at a time, continue beat until stiff peaks form.

4. Fold egg white into butter mixture bowl. Pour into prepared tin

5.Bake for 40-50 minutes.

This recipe is really easy and works well.

Always soak glutinous rice (sticky rice) with cold water for at least 3 hours or overnight.
