Secret Ingredients : Coriandrum sativum.


Coriandrum sativum or Coriander or Cilantro or Chinese parsley and Thai is Phak chee (coriander), Rak Phak chee (Coriander roots).

The secret ingredients of Thai cuisine! most people will think ah..Lemongrass, ahh.. Lime leaves, actually they're right but not what we are going to talk about today.

Coriander roots and Garlic are a very happy couple in Thai cuisine such as stir fried, the roots are often used with garlic to enhance the aroma of the dish by pound 2-3 roots with 2 cloves of garlic in a mortar or grind them in a food processor, with hot oil just stir in the coriander and garlic mix, then add any meat you like such as chicken, beef, pork or prawn and add some fish sauce or soy source, often served with boil rice... it's heavenly easy and delicious.

Freeze : Coriander roots can be freeze by wash and dry and contain in the plastic zip locked and it keep for up to 6 months or even year.

Always soak glutinous rice (sticky rice) with cold water for at least 3 hours or overnight.
